Meat-filled Pancake

This meat-filled pancake recipe is from Holland. This tasty dish is a Dutch treat!

MEAT-FILLED PANCAKE

1 cup flour
1 1/2 cups milk
2 eggs
1/2 teaspoon salt
3 tablespoons butter
Meat Filling (recipe below)
Measure flour into medium mixing bowl, add milk and blend thoroughly.  Add eggs and salt, beat until smooth.  Store until ready to use. 
To prepare pancakes, melt 1 tablespoon butter in a 10-inch skillet and pour in half of the batter.  Brown pancake well on one side, turn and brown lightly on the other side.  Keep hot while preparing the second pancake.  Spread filling on light side of first pancake and turn second pancake, brown side up, on top of first.  cut into wedges and serve at once.

MEAT FILLING

1/4 cup butter
6 tablespoons flour
2 cups bouillon or stock
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon nutmeg
2 tablespoons lemon juice
2 cups cooked meat, ground or minced
1  4-ounce can mushrooms, drained
Melt butter, blend in flour.  Slowly add bouillon, stirring constantly until mixture is smooth.  cook over low heat, stirring occasionally until thick, about 8 minutes.   Add seasonings, meat and mushrooms.  Keep meat hot while preparing pancakes.
